pumpkin spice oatmeal

Happy Halloween!

In case you were wondering, I slept with the lights on last night. Taylor met up with a friend so I was left alone with my scary book, a cup of hot cocoa, and Henry for protection. It was a long evening!

Luckily Taylor came home at a decent hour and I was finally able to turn off the lights and get some “real” sleep. And after 7 glorious hours we woke up and made a piping hot bowl of pumpkin spice oatmeal. Not only was this oatmeal festive, but it was the best damn oatmeal we’ve ever made! So delicious. We enjoyed our oats with black coffee and the newspaper. The best way to start the day.

I can’t wait until the springtime when this puppy is full of seedlings! We are getting so excited.

Pumpkin spice oatmeal (serves 2)
3/4 cup old fashioned oats
1 1/2 cups unsweetened almond milk
1/2 cup pumpkin purée
1 tbs pure maple syrup
1 1/2 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
Dash of sea salt
1 banana. Smashed
In a medium sized pot heat the oats and milk over medium heat until a light boil. Stir in the pumpkin and mashed banana. Cook over low heat for about 5 minutes or so stirring frequently. Once most of the liquid has cooked down add the spices and syrup. Sprinkle on some crushed pecans or walnuts and enjoy!

    Isn’t it nice that you actually have time to read?? Enjoy! Life seems a tad more fun for you now, and the greenhouse looks great. Send pics when it’s finished, and how you decide to plant the interior.
