Guys, good news. Our winter cover crop is in the ground.

We seeded it, raked it in, and said a silent prayer.

Now all we have to do is manually remove all the big rocks from the field and build our greenhouse.

We thought removing the rocks wouldn’t be a big deal. However, after a day of rock removal I made an emergency trip to CVS to stock up on Advil. Boy do we have our work cut out for us!
Thank god for delicious lunches to help get us through the tough afternoons.

This here is another smashed chickpea sandwich creation. It totally rocks! (no pun intended)

Smashed chickpea and delicata squash sandwich with cumin lime dressing.

Here is what you need: makes about 4 sandwiches
1 can of chickpeas, drained, rinsed and patted dry
1 delicata squash, seeded and roasted
Juice from 1/2 a lime
2 tsp cumin
1/4 tsp red chi flakes
1/2 tbs honey
1/2 tbs olive oil
Arugula for topping
In a large bowl mash the chickpeas and squash with the back of a fork or potato masher. Set aside. In a small bowl whisk together the lime juice, oil, honey, red pepper flakes and cumin. Drizzle dressing over chickpea and squash mixture. Mix well. Scoop mixture onto a slice of you favorite bread and top it with arugula. I highly recommend grilling these on the stove top. However they would taste fine as is.
