cheddar bbq chickpea burgers

Taylor can say whatever he wants about veggie burgers.  But when push comes to shove he will devour an entire meatless burger in about 30 seconds.  And this particular veggie burger left bbq stains on his shirt (which in his book is a good thing!)  If a burger doesn’t stain your clothing than it ain’t  that good.

 

Cheddar bbq chickpea burgers rock.  Even if you love meat these will knock your socks off.  And hey, who doesn’t love anything smothered in bbq sauce?

BBQ Cheddar Chickpea Burgers

1 can of chickpeas, rinsed and drained

1 medium carrot, chopped

1 small red onion, chopped

1/2 cup panko bread crumbs

1 egg

1-2 tsp cayenne pepper

1 tsp ground cumin

dash of salt and pepper

A few slices of extra sharp cheddar cheese

a few tablespoons of your favorite bbq sauce

In a bowl mix together the egg and spices.  Set aside.

In a food processor pulse the chickpeas, carrots, and onion.  Add bread crumbs and pulse a little more.  Pour in egg mixture.  Mix well.  Form 4 patties.

In a large skillet heat a few tablespoons of oil.  Once oil is hot add patties.  Cook for about 4 minutes per side.  Once patties are done assemble your burger.  We added sliced tomato, lettuce, bbq sauce and cheddar cheese.  Amazing!

Be careful, they are messy!

    My old neighbor’s used to say, Unless a burger doesn’t ooze juice down your sleeve it isn’t worth trying. Looks like this is a contender as well.

    Looks like some fall meals are beginning to happen. But a good burger knows no season.
