Alright, I have a split second to share this recipe with you before pumpkin beers and pumpkin spice lattes take over.
We have two days until September. I want to enjoy every ear of corn, every last cherry tomato, and possibly the last basil plant of the year.
The liquor stores are stocking up on pumpkin ales and I saw an advertisement for pumpkin spice lattes coming to a Starbucks near you. Hurry up guys! These recipes wont be possible for much longer.
I seriously thought we had all the time in the world for tomatoes, then I left my house. Damn you Starbucks!
Summer Quinoa Salad:
2 1/2 cups cooked quinoa
1 large cucumber, peeled and chopped
2 cup sliced cherry tomatoes
1/2 cup feta cheese
Cilantro for garnish
For the dressing:
juice of 1 lime
1 tbs honey
dash of cumin
1/3 cup chopped fresh parsley
In a bowl whisk together all the ingredients for the dressing. Set aside.
In a large bowl combine cooked quinoa with tomatoes, cucumber and feta. Pour dressing over salad and toss to coat. Set aside and serve at room temperature or chilled.
