it’s friday!

Yep, it’s finally Friday.  We are pretty happy around here.

Okay, so Friday actually doesn’t mean much to us farmers. We still have to work all weekend.  However, everyone around us is in the Friday spirit which is really contagious!

Hopefully, most of you have the weekends off.  If that is the case I highly recommend having lunch at home.  The recipe I am about to show you would taste awesome alongside a sandwich, pasta salad, or even a piece of cold chicken.  It’s simple, healthy, and tastes amazing.

Raw Kale Salad with Avocado and Tahini Dressing.

If you don’t like kale this recipe is NOT for you!  However, we love kale around here and I encourage everyone to give it a try if they have not done so already.  Cooked kale tends to be less bitter than raw kale so if you haven’t tried kale yet I recommend cooking it first.

The trick to this salad is to massage the kale first to release some of it’s bitterness.  (Yes, I said massage the kale!) Chop it into bite sized pieces, massage it, pour dressing over it, and massage the dressing into it. Trust me, it won’t be bitter this way.

Raw Kale Salad with Avocado and Tahini Dressing:

1 bunch of curly kale, torn into bite size pieces

1 avocado, diced

about 3 carrots, shredded

1/4 of a red onion, diced

sesame seeds

For the dressing:

1/4 cup tahini

2 tbs rice vinegar

1 tsp sesame oil

1 scallion diced, white and light green parts only

1/3 cup water

1 tsp of tamari

Dash of salt and pepper

Mix all ingredients together.  I used my immersion blender which worked really well.  If you don’t have one whisking the dressing will work just fine!

Remember to massage the dressing into the kale.  Roll up your sleeves and dive right in!  Top salad with avocado slices, shredded carrots, and sesame seeds.  Enjoy.
