this past week

We went to our first farmers market of the season.  It was rainy and cold.  No big deal. At least we were able to stand upright for 8 hours.  Farmers markets feel like a tropical vacation compared to field work!

Okay, so maybe we were slightly miserable because of the rain, but the sun should be shining this weekend for our second market.  Fingers crossed!

This week we also took advantage of the only sunshine we had and took Henry for a swim.

I am not sure if I have mentioned this before but Henry LOVES the water.  If there is water in sight he is there in a flash.

The only problem with swimming in the pond across the street is that we end up with a very dirty dog.

At least it also means a happy dog.  And that is priceless!

Farmers markets and dirty dogs were not the highlight of the week however. We made a big purchase.

Our very own juicer!!!!  We purchased the Hurom juicer and could not be happier.

This puppy is amazing.  We went out and harvested all of the goods and came home and juiced away.

Our favorite combination so far is spinach, swiss chard, apple, ginger, and lemon,

Sounds crazy, but it tastes amazing.  We are convinced that if we have a juice at least once a day we can eat as much bacon as we want!  Reason enough to gulp down a giant green monster every morning.

And speaking of green monsters, I have been making garlic scape pesto with every second of spare time I have.  I can’t get enough.

If my skin begins to turn green you know why.

I am sure you can probably guess what we did with the pesto this time……

Another tortilla pizza.

I am telling you, if you are strapped for time these guys are the way to go.  Delicious, easy, and packed with flavor.

This time we spread some garlic scape pesto over a tortilla. Layered on some sliced summer squash, diced red onion, a handful of mozzarella cheese, parmesan cheese, and hot pepper flacks.  Baked in a 425 degree oven for 10 minutes.  Perfection!

You all have got to try this method.
