summer lovin

I love this time of year. It’s time for margaritas, sunscreen, flip-flops, and lots of leafy greens!

I dream of summertime all winter long. I feel totally alive this time of year. The days are longer, the nights are beautiful, and we eat like kings and queens.

We are so lucky to be farmers.

Our bodies may ache but our spirits are high.

And food like this makes us very proud.

Our lunch today was simple. A farm fresh salad with edamame, avocado, red onion, and grilled tempeh.

With a side of green juice. Spinach, chard, apple, and ginger.

We felt like a million bucks after this meal.

What do you all enjoy about the summertime? Is it the weather, the food, vacation…….Or are you more of a winter person? Either way, let me know what your simple thrills are!

Enjoy your evening!

  1. Just wanted to let you know that I made your veggie burgers and asparagus fries, both were quite tasty, thank you! Also, we got a puppy- meet Sancho via my blog. Any puppy advise?

yay! glad the burger and fries turned out well. SO excited for you and your new puppy! Sancho is an awesome name! My only advice is to be patient, stern, and loving. Dogs are the absolute best! coming home to a dog after a long day is the best. So happy for you!

Summer pleasures: The song of the birds. The heavy opalescent moon, high in a summer night sky. The smell of fresh-mown grass. The laughter of children playing. The screech of the seagulls against blue sky and the green Atlantic. The happy barks of happy neighborhood dogs. The crackle of a bonfire on the beach.
And a simple pleasure for all seasons is reading Andrea’s blog on farming.

Wow! Beth really waxed poetic! Very nice.
