Yesterday afternoon I went for a run after a long day on the farm. About a mile into my run the smell of barbecue was all around. I heard people laughing in their backyards, dogs barking, and the familiar sound of beer cans being opened. All I could think about was running faster so I could get home and partake in the same fun everyone else seemed to be having.
I raced through our front door panting and desperately asked Taylor if he could start the grill. He told me to calm down and that of course he would get things going.
I don’t think he realized how desperate I had become during my run. I was literally salivating the whole time.
After pounding 2 big glasses of water we cracked open some beer and got busy.
These beers were delicious!
Taylor was in charge of the grill and I was in charge of getting our patties made.
Spicy black bean, chickpea, and sweet potato burgers. With a side of asparagus fries.
These were damn tasty. Best veggie burger ever!
The fries were a highlight as well. Perfectly crispy.
If you are looking for a great vegetarian meal this is for you.
Spicy black bean, chickpea, and sweet potato burgers: Makes 5 large patties
1 15 oz can black beans (rinsed and drained)
1 15 oz can chickpeas (rinsed and drained)
1 large boiled sweet potato, chopped into bite size pieces (do this before you boil it)
1 medium sized yellow onion, diced
1 medium sized bell pepper, diced
about a 1/2 cup panko breadcrumbs (maybe a little more than that)
2-3 tsp cayenne pepper
1 tbs ground cumin
salt and pepper to taste
Whisk eggs and spices together in a small bowl.
In a large bowl mash the beans with the back of a fork. Add potato and mash more. Add chopped veggies. Mix well. Add bread crumbs. Then add the egg mixture. Mix well.
Form patties using your hands. We were able to make 5 large patties. Place on tin foil and grill. Or cook in a large frying pan for about 7 minutes per side.
1 cup panko bread crumbs
1 lb asparagus (ends trimmed)
3/4 cups all-purpose flour
2 eggs lightly beaten
salt and pepper
preheat oven to 375. Slice your asparagus in half. Dip each spear in flour, then egg wash, then bread crumbs. Repeat with each one. Spread on a baking sheet and bake in the oven for 15 – 20minutes. Or until golden brown. Enjoy!
