leftover bacon

Contrary to what you may think, we usually don’t eat bacon two nights in a row.  We manage to have some self-control!

However, tonight we made an exception. I used running a marathon on Monday as an excuse to indulge in another night of bacon grease.  And hey, its organic bacon grease so that makes me feel a little less guilty.

Plus it was a dark and gloomy day at the farm.  Bacon always tastes better after a dreary day of farm work.

The pasta dish below is one of my favorites.  It uses roasted carrots as the pasta sauce, and is combined with steamed broccoli, parmesan cheese, and bacon crumbles.

Simple yet packed with flavor!

Here is what ya do.

Preheat your oven to 400.

Chop up 6 large carrots into about 2 inch long pieces.  Toss in some olive oil salt and pepper.  Add about 3-4 cloves garlic.  Spread on a baking sheet and roast for 20-30 minutes.

Meanwhile cook your pasta.  During the last minute or two of cooking time add about 1 cup of broccoli florets.  Drain

Place your roasted carrots and garlic in a food processor with 2-3 tbs olive oil, 1/2 cup hot water, 1/4 cup parmesan cheese and puree.  If the mixture is too thick add more hot water.  Season with salt and pepper.

Toss pasta mixture and carrot puree together.  Garnish with bacon crumbles and parmesan cheese.  Serve warm.

Since Henry saved me from a pack of coyotes this morning (literally) He got to enjoy 2 slices of fried bacon.  Best dog in the world!

Don’t let that face fool you, when I’m in trouble he springs into action!

Have a great evening.

Just a quick note to let you know I’ll be thinking of you Monday! You already succeeded by qualifying Andrea! It’s going to be a hot one…..best of luck!

Hi Andrea….Not sure if you’re running on Monday, but if you do, I wish you the best of luck. I admire you tremendously for your running abilities. You are one gutsy lady!!!! I also wanted to let you know that, if you run, you won’t be the only Lieberg out there. Heather Lieberg who is married to your second (or maybe third) cousin Justin Lieberg who is the son of your Dad’s cousin, Jim Lieberg, will be running. Have I totally confused you????? Heather lives here in Helena and has made quite a name locally as a heck of a runner. I believe she ran a the Portland marathon last year and did quite well. I have told your Dad a bit about her. So, although I know you will be totally focused on Monday, somewhere in those massive crowds of runners will be a relative. I will be thinking about you on Monday, Girl. Give em hell and don’t get trampled!!!!! Love to you, Taylor and Henry from your Montana aunt, Patty.

Thanks Patty! It feels good to know there will be another Lieberg pounding the pavement with me! My dad just flew into town and is going to run a few miles with me! He’s the best!
We’ll let you know how it goes.
