Contrary to what you may think, we usually don’t eat bacon two nights in a row. We manage to have some self-control!
However, tonight we made an exception. I used running a marathon on Monday as an excuse to indulge in another night of bacon grease. And hey, its organic bacon grease so that makes me feel a little less guilty.
Plus it was a dark and gloomy day at the farm. Bacon always tastes better after a dreary day of farm work.
The pasta dish below is one of my favorites. It uses roasted carrots as the pasta sauce, and is combined with steamed broccoli, parmesan cheese, and bacon crumbles.
Simple yet packed with flavor!
Here is what ya do.
Preheat your oven to 400.
Chop up 6 large carrots into about 2 inch long pieces. Toss in some olive oil salt and pepper. Add about 3-4 cloves garlic. Spread on a baking sheet and roast for 20-30 minutes.
Meanwhile cook your pasta. During the last minute or two of cooking time add about 1 cup of broccoli florets. Drain
Place your roasted carrots and garlic in a food processor with 2-3 tbs olive oil, 1/2 cup hot water, 1/4 cup parmesan cheese and puree. If the mixture is too thick add more hot water. Season with salt and pepper.
Toss pasta mixture and carrot puree together. Garnish with bacon crumbles and parmesan cheese. Serve warm.
Since Henry saved me from a pack of coyotes this morning (literally) He got to enjoy 2 slices of fried bacon. Best dog in the world!
