I am a dork.
Some of the smallest things bring me great joy.
Wholesome food, great friends, running, wine, and the FIRST lettuce planting of 2012!
I feel like a kid in a candy store roaming the greenhouse these days.
It is filling up quickly my friends!
I guess it really is spring.
And since we love any excuse to crack open a bottle of wine and celebrate, that is exactly what we did.
And dinner was not half bad either.
Spicy sweet potato pancakes with a lime curry yogurt sauce. To die for.
Taylor took one bite and said “you know, I don’t miss eating meat. These are damn good!”
For the pancakes:
1 sweet potato, peeled and grated (if you have a grater attachment with your food processor this works beautifully)
1/2 of a yellow onion diced
1 celery stick, diced
1/4 cup breadcrumbs
2 eggs (if your mixture seems too dry, add one more egg)
a few dashes of cumin, paprika, and cayenne pepper
salt and pepper to taste.
Mix all ingredients into a bowl. Form patties. We made about 8 patties.
Fry in a frying pan over medium-high heat in a little olive oil. About 5 minutes per side (or until browned)
Serve with lime curry yogurt sauce
1/2 cup plain greek yogurt
juice of one lime
1 tbs curry powder
handful of chopped cilantro
Mix all ingredients in a bowl. Top your pancakes and enjoy!
