we’ve gone veggie

Just kidding.

Kind of.

In an effort to save money and feel healthier we are cutting back on our meat intake.  We actually haven’t been eating a ton of meat lately and it is sort of happening naturally.  However, as of today, I plan to not purchase any meat for the next two weeks.  Not even bacon! Hopefully, our bank account will look a little fuller at the end of the experiment.

We will see how it goes.

Even though we aren’t eating any meat, that didn’t stop Taylor from breaking out the bbq last night.

We made an easy veggie dinner that hit the spot.

Sweet potato, corn,  and black bean burgers!

We didn’t have any buns, so we enjoyed our patties on a bed of spinach with a drizzle of homemade Tahini-Lemon Sauce from the Moosewood cookbook.

We also topped our burgers with cheese.

They were really tasty, and I can’t wait to make them again.  It’s amazing what a sweet potato and a can of black beans can do!

Here is what you will need.

1 large sweet potato, steamed or boiled.

1 can black beans, drained and rinsed

1/2 cup frozen corn kernels.

1/2 an onion diced

1/4 cup bread crumbs

1 egg

a few dashes of paprika

dash of cumin

a few dashes of cayenne pepper

salt to taste

Mash all ingredients together in a big bowl.

Form patties.  Dust each patty with a few more bread crumbs.  Cook on the stove top with a little olive oil for about 4 minutes per side.  Or cook on a bbq for about 10 minutes per side. Or until browned evenly.

    Meanwhile the rest of your west coast family enjoyed a delicious meal, boeuf a la nicoise; braised beef (6lbs) stew with red wine, tomato, olives, and buttered noodles. No shortage of meat on our plates. We’ll be enjoying left overs this evening.

      your being mean!!! that sounds divine! if i was home i would not be going veg for a couple of reasons.
      1. i’m pretty sure you guys would be forking over the dough for the meat.
      2. the butcher at your market is the best!
      3. Can you overnight some leftovers to us?? i’m sure taylor would be up for cheating on our no meat plan.

    Our leftovers were to die for. However we’re going meatless tonight with lentil soup. It’s cold and raining. Guess that goes without saying given that it’s March and Portland.
