Hot yoga was HARD.
I am training for a marathon and as a result I am stiff as a board.
Needles to say, things got pretty ugly. But the good news is that hot yoga makes you really hungry. I love working up an appetite by doing actual physical labor. And yoga is definitely physical.
Thank god I had plenty of this leftover:
If you guys were smart you all made a batch of this spicy sweet potato hummus.
And since you are all an intelligent bunch we will go ahead and assume you made some. In which case you have plenty leftover.
This is a good thing though. Because if you are like me, you love a good grilled cheese sandwich every now and again.
This is no ordinary grilled cheese. It is smothered with sweet potato hummus and extra sharp cheddar cheese.
With a side of raw broccoli. The perfect lunch.
All you do to make this puppy is grab two slices of good bread. Smear one side with hummus, the other side with slices of your favorite cheese. Drizzle a little olive oil on each side of the sandwich and place in a Panini maker or over the stove top and cook.
