Are you still hungry?

If your appetite is anything like Henry’s then the answer is yes!

Taylor and I loved our beet quesadillas from the other night so much that we could not wait to dive into some leftover ingredients the next day.

(Warning: eating too many beets will turn your pee red! I thought I was dying the first time this happened.  Not to worry, you are perfectly healthy and do not need to call your doctor.)

Alright, with that out of the way lets move onto this easy recipe.

Leftover goat cheese, beet sauce, and some kale (that I froze from the fall) all thrown together on top of gnocchi.

To die for.

I love the texture of gnocchi.  We have made it from scratch before, but I usually resort to the pre made little guys from the store.  They cook up in no time and taste amazing with any of your favorite pasta sauces.

All we did for this recipe was sauté up 1 bunch of kale in garlic and butter.  While that was happening we heated up our beet sauce in a saucepan over medium low heat.  We cooked our gnocchi according to the package directions and combined everything once it was all cooked up.

Total cooking time.  20 minutes!  Can’t beat that.

Topped with a little goat cheese and a sprinkle of salt and pepper.


We are off to the apple orchard this morning.  We are hoping to be done pruning by mid March.

I can’t wait to be done with the apple trees.  I miss getting my hands dirty and I really miss working with vegetables.  Winter is clearly not my season.
