In celebration of being back, I imagined that my first recipe for you all would be something special. Something classy. But the truth is, the recipes we have been cooking up recently have all be really basic. Basic, but delicious.
This first recipe I will share with you all is a staple in our household.
Black bean burgers!

The only difference is that I had Taylor grill them this time! They were amazing!

Grilling black bean burgers under a full moon is pretty amazing!
We served our burgers with a side of spicy sweet potato fries. The fries were a major bonus since I thought we had used up all the sweet potatoes from the season already.
Good news though…..in the back corner of our cupboard was a paper bag filled with about 10 sweet potatoes! Christmas in February!
I cut up about 5 sweet potatoes. peeled them and sliced them into thin fries. Coated them evenly with olive oil, paprika, cumin, chili powder, salt and pepper. Baked in a 425 degree oven for about 35 minutes. Turning once. They were perfection!
The icing on the cake (or fries for that matter) was the spicy aioli sauce I made to accompany the burger and fries. (Yes, we both smothered our burgers in this heavily sauce!)
The sauce was easy, and made the whole meal!
Spicy aioli sauce: (this makes a lot of sauce but you will have plenty of leftovers for another use)
- 1 quart mayonnaise
- 1/2 cup Thai-chili paste, (recommended: Sriracha)
- 1/4 cup lime juice
- dash of cumin
- 2 tablespoons salt
- 1 tablespoon cayenne pepper.
Mix all ingredients into a bowl and chill until you are ready to serve!
We have been dipping celery sticks into the leftovers all day! Yummy!
And as always, I recommend serving this meal with a glass of your favorite wine. Cheers!
