Good morning from beautiful Portland, Oregon!
The grass is green here, the leaves are still hanging beautifully on the trees, and it is currently not raining! I love Oregon.
It feels so great to be home. I don’t get to see my family very often but when I do it is the absolute best time.
And a major perk is being able to cook with my mom. She is one of the best cooks I know and it is great being in the kitchen with her!
Another great thing about being home….Fig, Prosciutto, and Blue Cheese salad.
My mom whipped this up in no time the other night. It is hands down one of the best salads I have ever had. You all need to make this soon!
Here is what you do:
Remove and halve 12 figs. Toss into a baking dish with a teaspoon chopped rosemary, and 2 tbs olive oil, 2 tbs honey, 2 tbs balsamic vinegar, and 1/2 tsp salt and pepper.
Place figs cut side down, cover with foil and bake at 400 degrees for 15 minutes.
Serve with arugula, proscuitto and blue cheese crumbles. Drizzle with juices from the baking pan.
