Apple picking and pesto

The best part about Fall is crisp mornings, beautiful foliage, pumpkin beer, and of course apples!

We are in full swing at the farm apple picking. In my opinion there is nothing better than climbing up a big old apple tree and collecting crisp delicious apples. It’s better than gold! And if you make it through the afternoon without falling out of the tree that is an added bonus!

And look who joined us picking yesterday.

Henry loves apples more than his dog bone. And who can blame him?

He’s really good at it.

After an afternoon swatting mosquitoes and trying to survive the humidity (it did not feel like Fall) we wanted to come home and eat something light and fresh. And since basil is no longer growing on the farm I turned to the next best thing….kale.

Kale walnut pesto served with pasta and tomatoes.

Kale walnut pesto

1 bunch kale, stems removed and leaves torn into bite sized pieces

1/2 cup chopped walnuts, toasted

2-3 cloves garlic, chopped

1/2 cup Parmesan cheese

1-2 tsp lemon juice

Salt and pepper to taste

1/4 cup olive oil

In a food processor combine the kale, walnuts, garlic and Parmesan until almost smooth. Season with salt and pepper and lemon juice. With the machine running add the olive oil. If pesto is too thick add more oil.

Serve pesto over pasta on sandwiches or anywhere else you can think to use it! Enjoy.

Glad to have you back. The apples are glorious. I made a big apple crisp with Sister of Fortune apples for a family gathering. Best one I have ever made. And thanks for the thyme. I cut some last week along with Thai basil and sage.

Hope you will post the recipe for the yummy looking soup you made in Portland.
