If you found yourself ankle deep in mud, rain blowing in your face, and endless rows of strawberries that needed to be weeded, you would probably run for cover. Any sane person would. Heck, so would I. Unfortunately, I love strawberries and will stop at nothing to make sure they grow big and strong for next year.
I can’t help it.
And guess what, it doesn’t stop at strawberries, the lettuce is pretty important too. Even in the eye of a storm!
Getting rained on all day can really take it out of a girl. Thank god for red wine and butternut squash. The perfect way to calm a storm.
The pizza recipe below is so good you all should just do yourself a favor and make this. Trust me.
Butternut squash and bacon pizza
1. Homemade or store bought pizza dough
2. 1 small butternut squash peeled, cubed, and steamed.
3. 1 small bunch curly kale torn into bite sized pieces
4. 3 strips of good quality fried bacon
5. 1/4 cup goat cheese
6. 1/3 cup grated Parmesan cheese
7. 1-2 tbs olive oil
8. Salt and pep to taste
Once your squash is steamed, place in a food processor with oil and salt. Purée.
Spread squash mixture over pizza dough. Crumble goat cheese on top. Crumble fried bacon. Layer kale. Drizzle oil. Add grated Parmesan on top.
Bake in a 425 degree oven for 10-12 minutes (oven times may vary)
