After eating my body weight in hot and sour soup from the chinese restaurant down the street, I am happy to report I am feeling much better! And man does it feel good to eat “real” food again.
Thank you all for your sweet comments on my health. Being sick is the pits!
However, since being back at work something very strange has happened. It’s cold outside!!! What on earth is going on? We were literally melting on Thursday and now it’s cold and rainy. I don’t get it.
Cold weather aside I have good news. Two of my favorite plants are making their seasonal debut. I literally jumped for joy when we got to harvest garlic scapes and basil on the same day. (Someone had their mind on fresh pesto)
I love garlic.
And nothing beats fresh basil!
I got to work in the kitchen right away.
Garlic scape and basil pesto:
5 garlic scapes
a handful of basil leaves
1/3 cup walnuts
1/2 cup parmesan cheese
1/2 cup olive oil
pinch of sea salt.
Blend all the above ingredients in a food processor. Taste test to see if you need more of something. I added a little more oil, and threw in an extra garlic scape. ( I like it really garlic-y) Enjoy on pasta, pizza, sandwiches, or by the spoonful!
