A salad is all you need for dinner.  But not some rinky dinky salad.  It has to have the works.

Like apples, avocado, and walnuts.  And since Taylor has had enough vegetarian meals the last few nights (I think only two nights in a row!)  He also requested some grilled chicken with his salad.  And since I am an accommodating wife,  I can make simple things like grilled chicken happen.

This was an easy salad that was hearty and filling. It was the perfect dinner for our four-month wedding anniversary!

Here is what you will need.

1 grilled chicken breast

about 5 cups spinach leaves

1 diced up apple

1 diced up small avocado

1/2 cup diced celery

1/2 cup raisins

1/2 cup toasted walnuts

Toss all the above ingredients together in a large bowl.

For the dressing

2 tbs lime juice

2 tsp curry powder

1 tsp honey

1/3 cup sour cream

1/3 cup mayonnaise

Mix the above ingredients in a bowl and drizzle over the salad.  Mix well and serve.  Enjoy!

We are off to bed early tonight.  I think we will be harvesting lettuce at the Farm tomorrow!  Woo-hoo for farm fresh salads.  Things are starting to pop up all over the place and I am SO excited to start cooking with more ingredients from the farm.

    Happy 4-month anniversary.
    Hey Andrea, your kale recipes sound wonderful – But when I saute kale it’s as tough as parchment. I cook it as long as you reccomend. Any idea what I’m doing wrong?

      humm. Make sure you remove the tough stems from the kale. I am sometimes lazy and leave them on. But if you leave the stems on, it will be tough. Otherwise, make sure you have enough oil or butter. And cook over medium-high. The kale should cook really quickly. About three to five minutes. I stir the kale a lot through the cooking process. It should turn bright green!!! Let me know if this helps!

        Maybe you’re right that I didn’t use enough oil.

    First of all, I made your black bean burgers last night– huge hit with the whole (half vegetarian) house (plus best leftovers-lunch ever today!). I also made kale chips again the other night. I can’t get enough.
