a little of this, a little of that

Yesterday was beautiful.  We are really in love with Hood River.  Blue skies, crisp air, and the scenery never gets old.

Taylor opted to ski while I enjoyed a hike around Hood River.  I am a sucker for beautiful views and the hike was amazing.  I can’t believe how gorgeous this area is.

When I got home from my hike Taylor was just getting back from the mountain.  We both had different ideas for lunch and while he was busy grilling this:

I was busy eating this:

A whole wheat pita toasted with pepper jack cheese, a fried egg, tomato, and crushed garlic.  Yummy.  I devoured this and then kept Taylor company outside while his meal continued to cook.

Henry kept us company too.

A pepper jack cheese, onion, and bell pepper burger. With a Sessions beer for desert.  We are definitely on vacation if beer is involved with lunch!

Later in the afternoon Henry took a nap by the fire, while I got busy cooking dinner.

Dinner was a delicious blend of brown rice, yams, purple onion, and black beans. With a side of roasted brussels sprouts.  I sprinkled the rice dish with a little dressing which added a nice kick.  2 tbs lemon juice, 1 tbs honey, a dash of cumin, chili powder, salt, and 1/3 cup olive oil all whisked together.

All this great food makes us really sleepy….

    Wow, it looks almost summery where you are! On the east coast, it is cold brrrrr…..!

    To tell you the truth both your lunches looks great!

      We have heard about the freezing cold/snowy weather that has hit the east coast. We feel very lucky to be able to walk around town/hike/run without bundling up too much!
      And yes, both lunches were great. I was actually jealous of the burger once I saw the finished product!

      Isn’t he the best!
      And yes, he has a shock collar for around the yard. It works great, and he doesn’t even need to wear it anymore, but we keep it on him just in case! He has brought Taylor and me such joy that it’s hard to remember our life without him.

      YAY! lets chat tomorrow about Sunday. I know Taylor will be up at the mt. skiing but I am not sure if I will head up or not. Call you tomorrow! XO
