thai peanut chicken to the rescue

Taylor really pulled through in the kitchen tonight.  I was exhausted from all our travels and he jumped right up and took charge.  He made something that really hit the spot and was not time-consuming at all.   Thai peanut chicken anyone?

He sautéed up an onion, green pepper, red pepper, and yellow pepper in coconut oil.  While that was happening he cooked the chicken in coconut oil, bbq sauce, and peanut butter.  He tossed everything together with some peanuts and rice. Totally easy and delicious.

With some vanilla ice cream and chocolate sauce for desert.  Yum.  These farmers are off to bed.  A long day of apple pruning awaits us.
