This farmer has an addiction. And that addiction is to bacon. I try not to eat it all the time, but it is the one food that I could not live without. You can add bacon to anything. Trust me I’ve tried. I like it with vegetables, pasta, sandwiches, bloody Mary’s and even chocolate! Bacon has never let me down. And tonight was no exception. I was feeling very uninspired to cook. Nothing was sounding good. But when I started thinking about bacon, a recipe was born.
This was the fastest, easiest, tastiest meal to make if you are uninspired to cook. This literally took less than 20 minutes. You can’t beat that!
First things first. You must fill a large pot with water and bring to a boil. (This is of course for some pasta) While the water is heating up you can move on to your veggies. You can use whatever veggies you like, I used brussels sprouts, broccoli, a leek and some garlic. Chop everything up.
Once your veggies are chopped you can use the same knife to chop up 4 slices of bacon. (Same knife, less dishes) You can use more or less depending on how much you love bacon. 4 slices was a good amount for us.
Throw the chopped up bacon in a frying pan and fry up for about 5 minutes. Then add all of your veggies. Cook in the bacon fat and stir every couple of minutes. I added a couple tbs of olive oil after about 5 minutes. Keep cooking over medium heat until the veggies have browned. About 10 minutes.
Happy cook. I think it was the bacon.
Once your pasta is cooked add it to the bacon and veggies. (I used about 1/2 cup of reserved pasta water to the bacon and veggie mixture.)
Dinner is served. We topped our pasta off with some parmesan cheese.
