Celebration!

5 pounds and counting! Henry is gaining weight and we are so happy.  For those of you who don’t know, we got Henry as a rescue last month.  He came 15 pounds under weight, stitches in his right eye, and deathly afraid to walk down stairs. However, a month has gone by and he can walk down stairs without fear and he is gaining some much-needed weight.  He has been such a delight and we are so happy to have him be apart of our family. (I am turning into a dog person.  I never thought the day would come!)

Tonight we are celebrating Henry getting healthier.  And sometimes a celebration like this calls for burgers……and sweet potato fries……am I right?

This would be a “Taylor” burger.  Which includes bacon and blue cheese,  on top of the meat, and in the middle.

I was in charge of the sweet potato fries.

Henry slept through the whole process.

Dinner is served!

Yum!

And no celebration is complete without a glass of wine.

Directions for the sweet potato fries:

peel and cut sweet potatoes into about 1/4 inch slices

season with olive oil, cumin, paprika, chili powder, and sea salt

bake at 450 degrees for 20 minutes.  Turning the sweet potatoes once halfway through.

    Congrats on Henry’s progress. His ribs are less prominent than in an earlier photo. Good to know how far a little care and kindness goes. A lucky dog to have you two.

      Thanks Jean. We are so happy with Henry. He is a great dog, and full of a lot of love!
      I am so happy you tried the fried green tomatoes! The best aren’t they???

      Bacon and blue cheese are two of my favorite foods! This combination will be happening a lot. Especially with the colder weather!
