Dinner For Three

It has been so great having my sister in town.  We have really been living it up in the short amount of time since she arrived.  Our first stop once she got settled in to our place was the Farm.  We swung by to do a small harvest before coming home and getting to work in the kitchen.

Yummy chard

We got back from the farm and began cooking up a nice simple dinner.

Last nights menu:

Chicken Satay with Peanut Sauce with a side of Swiss Chard Salad

This turned out just as good as it did a few months ago when I made it with my girlfriends.   The Swiss Chard salad was a nice side dish that complimented the chicken very well.

Ingredients for the chard salad

* 1 bunch Swiss Chard

*2 tbs Olive Oil

*3 Tbs minced shallots

*1/2 cup peanuts

Cut the stems off the chard and saute in the oil and shallots for about 5 minutes

Add the chard leaves and cook, stirring frequently, about 1 minute.  Add about 2 tbs of water and the raisins.

Cover and let cook for about 8 minutes.

Once the chard is fully cooked add the peanuts and enjoy!

We enjoyed this meal with some vino and then called it a night!

I am currently getting ready to head out the door to the Farm.  I am enjoying a bowl of oatmeal with a scoop of almond butter, pumpkin butter, maple syrup, raisins and cinnamon.  Basically I am eating pumpkin pie for breakfast!
