Dinner At Ralphs

I survived a long day in the farm stand.  It helped that the customers where awesome and I even got a gift.  One of Hutchins loyal customers has been making organic ketchup using our tomatoes.  She has been telling me about it for the past couple of weeks and today she came in with a tasty present.

Our tomatoes make great ketchup! Speaking of tomatoes, my good friend at the farm recently said it best when he said “you really don’t know anyone, until you have staked and strung tomatoes in 100 degree weather with them.”  Thanks to all our hard work, our tomatoes are the best!

And since summer has returned in full force (it was 85 degrees today)  I decided to make something light and healthy for dinner.  My farm friend Andrew came over after we worked a full day in the farm stand.  We did not have time to harvest, but we were able to take some leftover tomatoes, lettuce, and green beans from work.  And while the boys enjoyed a beer in Ralph’s Bar, I got to work in the kitchen.  Tonight’s dinner was easy, quick, and healthy.  If you are in a hurry, you can’t go wrong with this pasta dish.

String bean and tomato pasta:

*Wash and trim your beans

*Steam for about 5 minutes (set aside)

*Mince 3 cloves of garlic and combine with about 20 cherry tomatoes sliced in half.  Add about 1/4 cup olive oil

*cook your pasta according to directions

*mix everything together and top with parmesan cheese

We enjoyed our pasta with a simple salad

    Just walked away from the Huntington Farmer’s Market (there is one!) with armloads of tomatos and green beens… Now I know what to make for dinner! Keep the easy seasonal recipes coming 🙂
